1 pound rigatoni
3 tablespoons extra virgin olive oil
1/2 pound speck, prosciutto, or bacon, diced
1 medium onion, jullienne
1 tablespoon toasted pignoli nuts, lightly toasted
4 tablespoons chopped fresh basil
1/4 cup diced sun dried tomatoes
1 1/2 cups chicken stock
1/2 pound goat cheese,crumbled
salt and pepper to taste

Bring a large pot of water to a boil.

Cook the pasta 2 minutes less than directed on the package. Drain the pasta, spread out on a baking sheet, and reserve.

In a large saute pan, heat the oil and saute the speck for 4-5 minutes, Add the onion and saute for 3-4 minutes more.

Add the pignoli, basil, and sun dried tomatoes and toss. Add the chicken stock and cook for 6-7 minutes more.

Return the pasta to the water for the final 2 minutes. Drain the pasta and add it to the saute pan along with the goat cheese, tossing again.

Warm for 2-3 minutes over heat. Season with salt and pepper and serve.
